Peanut Butter and Banana MINI Coconut Flour Pancakes

These pancakes are delicious on a lazy saturday morning. Refined carb free and no added sugar, this yummy meal will keep your blood sugar levels steady and you happy!
Ingredients:
(makes 10 small pancakes)
2 tbps coconut flour
1/4 cup almond milk
1 banana
2 eggs
pinch of ground cinnamon
pinch of sea salt
drop of vanilla essence (optional)
Directions
Blend everything in a blender. (Haha, you would notice all my recipes are for lazy people)
Heat 1 tsp coconut oil in a pan and drop mixture on to pan.
I made them coin sized because they are just so cute that way. 
(notice they are not much bigger than the banana slices) 
Cook on each side for about 1 min, depending on the size of the pancake. 
Resist the urge to flip them over till you see bubbles forming on the top of the batter.
Stack pancakes with a generous smear of all natural, no sugar added peanut butter (I recommend Adam’s!) and slices of banana. Sprinkle with silvers of almonds or top with maple syrup if you like.
