Lunchbox Meal Prep- Prep Once, Eat All Week: Week 1, Day 1

Alright everyone! So today is Monday! (well it was when I made this haha) and this was how I prepped my lunchbox when I woke up!

Once I get into the kitchen, I boiled some water in a pot and putmy pre-portioned, pre cut broccoli into a pot. You would notice my soup pot containing my premade carrot soup also reheating merrily away behind the broccoli. While the broccoli is boiling, I lay out a piece of parchment paper and take the rye wrap I bought the day before. (I bought a packet which had torn wraps T.T)

The broccoli would have boiled by now (3min) so I drained all the water away and chopped the broccoli smaller because not that the wraps are torn they would be too big to fit but you can skip this step if you wraps aren’t torn >:( . Leave the fire on still while draining the water and with the broccoli inside, add in some pasta sauce (alce nero is my favourite, no junk pasta brand) add in heaping spoonfuls from your veggie box, stir together, switch off fire and TADA! a super rainbow coloured nutritious lunch for later. (< 10min) (you can add in chicken breast — it keeps well in the fridge– or any kind of meat into the wrap as well)

I lay my wraps on the table and top them with mozzarella and black pepper. While they are cooling off slightly, I scoop my soup into my thermal flask.

Then I pack everything into my lunchbag and I’m good to go! All I have to wash is that one pot I used to make the broccoli.

What’s for lunch today? Mixed veg mushroom and cheese on rye wrap with comforting thick hot carrot soup. How much would it have cost at a cafe? At least $10 + . How much did it cost me? THe carrots were :1.30 a pack so I would say this whole meal was less than $4. It is almost impossible to find this kind of fibre packed nutrition at this price in Singapore!Yummy, cheap, nutritious! I LIKE and I hope you do too! 🙂

Remember to bring a large bottle of plain water as well! 🙂 What do you think of a lunch like this? 🙂

    Hello Grace
    Thank you so much for sharing with generosity. I am definitely all for packing your own lunchbox if one wants to eat healthy. However, I have a few concerns as if you cook just once a week, like the precooked soup which has to be reheated again the next day, won't most of the nutrients be gone? Now that plant based food, raw food and all are in the rage, I always wonder how much do I eat still has any nutrients left with cooking and reheating especially. What do you think about this?

      Hi Mich, I'm not too concerned about the nutrients because I eat a wide variety of food both fresh and premade. My greater concern is the lack of fibre and high amts of oil and salt found in outside food. There is also not much nutrients lost with meal prepping. HAHA. I KNOW RIGHT!! All these new fangled diets and what not. It's most important to follow what you think is best for you. Raw vegetables contain maximum nutrients of course but i hate raw vegetables so if I followed a raw food diet, I would be sad and miserable! I may lose some nutrients cooking my veg, but at least I'm actually eating it! 🙂

      Hmm, I totally got your point now because I have been trying to "eat healthy" yet keeps wondering if I am doing right .. like dairy products have such bad rep in the west so I always wonder if I should give it up as I love milk and cheese! Then, there is bread, you know the list goes on and I got miserable and ended up gaining weight as I ate cupcakes and chocolates away whilst I kept planning for the next day, haha.

      I know EXACTLY how you feel. When I first started eating healthy, I was bombarded by so much info! Was cheese good? Bad? How about meat? Should I be vegan?! etc etc etc. I did try a 'detox' diet once, you can check it out here :http://vegsmoothiebunny.blogspot.sg/search/label/detox%20diet And I swore NEVER EVER to subject myself to such torture ever again. It's crazy how life on a diet suddenly becomes so restricted based on what a person you've never met nor even livein the same country as tells you to eat! Now i just stick to food that either grows from the ground and walks, runs, flies or swims. Nuts, sugary treats and chips cause me to binge very badly so I try to stay off them or eat them in the presence of other people so I wouldn't go too crazy haha. Do what is good for you! Eat some cheese if you like! (I eat cheese everyday!) If it makes you bloat or have uncontrollable cravings then you know it's not good for you! One day some scientist might say coffee is good, the next day is bad, we can't rely on what people tell us! Just try it and see how it affects your own body! 🙂 I used to spend some days 'healthy' eating the whole day and tell myself, cannot eat meat or fats coz it's BAD! Then when I reach home at night I'll just lose all control and binge on whatever is available (usually chips and cookies) Now I don't restrict myself but try to eat more fruit and veg to stabilize my appetite. lol. Don't give up! Progress, not perfection is what we're looking for! 🙂

      YAY! just start off small :and keep going! My thermal brand is from Tiger (you can find a picture of it in my FAQs) I bought it from Takashimaya for about $80 and it has lasted me almost 5 years now and still going strong 🙂 My soup pot has no brand. But it was from japan 🙂 It's about 380ml. It's a good size for 1 serving of soup for a meal. I then you bigger containers to store food and other thermal type containers if the food needs to be kept hot. 🙂

What brand is your thermal flask for soup and where did you buy it? I have a problem keeping food like boiled vegetables warm to eat for lunch. Any tips or goof thermal bags to recommend? (:

      Hi Patricia! My thermal flask is from tiger. I bought it at takashimay and it's REALLY REALLY good. It keep liquid HOT (like burn your tongue hot) for up to 6 hours and after that it's warm even after 12 hours :/ I know becasue when I washed the flask the liquid I poured out was still warm! Technology these days- amazing! I normally boil veg and just keep it in an air tight ontainer then come lunch time, I dip it into my soup or meat stew. HAHA. It becomes warm like that. My thermal flasks are pretty good so I don't use a thermal bag however, if you want a really good one, you can always check out camping stores! 🙂
